Role Overview

Bakehouse is looking for an experienced Head of Research & Development (R&D) to lead our R&D unit, driving innovation and ensuring product excellence across our bakery offerings. This role is critical in developing and refining products, with a strong emphasis on viennoiserie and sourdough bread, while also overseeing process improvements, scalability, and cost optimisation.

 

The ideal candidate is a master of laminated doughs and sourdough fermentation, has a deep understanding of bakery techniques, and is highly skilled in product development, quality control, and operational efficiency. This person will work closely with production, retail, marketing, and external partners to ensure that Bakehouse remains a leader in artisanal baking.

 

Key Responsibilities:


Product Monitoring & Quality Improvement

  • Oversee and evaluate the performance of all bakery products, with a primary focus on viennoiserie and sourdough bread.
  • Maintain product consistency, troubleshoot quality issues, and refine processes for enhanced stability and shelf life.
  • Handle and resolve customer feedback related to product quality.
  • Support product photoshoots and content creation to ensure visual representation aligns with Bakehouse’s standards.


Product Innovation & Development

  • Lead R&D efforts across all bakery categories, with a focus on new viennoiserie and sourdough bread development.
  • Experiment with fermentation, butter quality, hydration, flour variations, and baking techniques to develop innovative products.
  • Validate ingredient changes for technical, quality, and cost considerations.
  • Improve existing processes through innovative solutions, ensuring production efficiency and waste reduction.
  • Conduct market research and competitor analysis to stay ahead of industry trends.
  • Collaborate with the wholesale team to develop customised products for clients.
  • Innovate in packaging design and sustainability, ensuring compliance with regulatory requirements (nutrition, allergen labelling, etc.).


Collaboration & Leadership

  • Work closely with the Executive Chef, Production HQ, and Retail Operations to develop and refine bakery offerings.
  • Manage a dedicated R&D team, overseeing day-to-day tasks, training, and reporting.
  • Collaborate cross-functionally with departments including QC, Supply Chain, Finance, Marketing, and Training.
  • Build and maintain relationships with external partners, including food suppliers, regulatory bodies (FEHD & Customs), laboratories, equipment suppliers, and consultants


Regulatory Compliance & Food Safety

  • Ensure all bakery products meet regulatory and food safety standards, including hygiene, allergens, and nutrition labelling.
  • Stay updated on industry regulations and implement necessary changes to maintain compliance.

 

Requirements:

  • Minimum of 5-7 years of experience in bakery R&D, with a strong emphasis on viennoiserie and sourdough bread.
  • Experience in scaling recipes for large-scale production
  • Experience in Bakery Factory Production is an advantage
  • Excellent communication and interpersonal to effectively collaborate with cross-functional stakeholders
  • Mastery of laminated doughs, sourdough fermentation, and bakery production techniques
  • Knowledge of food science, food safety, and regulatory compliance
  • Financial acumen, including costing, pricing, and process efficiency
  • Good Communication Skills in Written and Spoken English, with Cantonese and/or Mandarin is a plus
