We are looking for a Chief Fryer (頭鑊) based at Island Shangri-La, Hong Kong!

As a Chief Fryer (頭鑊), we rely on you to:

• Co-ordinate the food production; ensure food quality, presentations and standards are maintained at all times
• Ensure ingredients for presentation and garnish must be prepared according to standards
• Monitor and fully implement the portion control established with the recipes and to maintain strict control on food portioning and wastage, ensuring gross food profitability
• Ensure smooth and effective communication among the all sections with other sections and kitchens
• Ensure the hygiene standards are achieved according to the HACCP & ISO22000 requirements
• 協調食品製作過程；確保食品質量、擺盤和標準始終保持一致
• 確保用作裝飾的食材製作過程符合酒店的標準
• 嚴格控制食品份量，避免浪費
• 確保各部門之間有效溝通
• 確保衛生標準達到HACCP和ISO22000要求

We are looking for someone who has:

• Minimum 5 years of relevant working experience, preferably in the Hotel / Clubhouse Industry
• Knowledge of HACCP & ISO22000 and sanitation standards
• Demonstrated teamwork
• 五年相關經驗，具酒店或會所行業經驗優先
• 具食物安全及衞生知識
• 良好的團隊合作精神
