The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

The Job
You will:

  • Plan and manage the day-to-day operations of The Racing Club kitchens including Hong Kong Kitchen (Hong Kong style western dining), Noodle Bar (Chinese) and Dining Room (Hot Pot) on both racedays and non-racedays.
  • Contributing to satisfaction of Members’ expectations of food quality and value for money in areas of responsibilities. This is achieved by planning and implementing menu cycles, set menus, promotion menus and special menus by taking consideration of latest trends in food presentation and seasonality, ability to develop unique recipes; establish good relations with Members to collect feedback and recommend changes to cater for their needs.
  • Monitor food production, quality and consistency according to recipes and Club's standards.
  • Assist Senior Manager, Food & Beverage to achieve business results and managing cost base in accordance with the annual F&B budget, food cost and KPIs by:
    • Monitoring and enhancing staff productivity
    • Conducting cost-efficient measures by utilizing operating equipment and optimal manpower deployment
    • Creating business and revenue improvement strategies
  • Exceptional leadership skills, including motivation and goal-setting.
  • Manage, train and foster teamwork with collaboration in a diverse kitchen brigade with differing experience levels.
  • Enforce that Club’s policies, procedures and guidelines are implemented in areas of responsibilities in order to adhere to government hygiene and safety regulations.
  • Develop and contribute to annual marketing plan to give inputs on ways to maximize revenues, and reflect Members’ preference and needs in the menus and creation.
  • Contribute and assist on special future project(s) / renovations by working closely with respective teams to give inputs on ways to maximize the projects or renovations.
  • Be responsible for the recruitment process of The Racing Club culinary team. Implement training activities and develop the team.
  • Good time management and organization.
  • Undertake other duties assigned by Senior Manager, Food & Beverage.

About You
You should have:

  • A minimum of 3-4 years of experience as Executive Chef level in renowned international hotels or Clubs
  • Hygiene Manager Certification or similar food safety qualification
  • Strong leadership, organization and planning skills, communication skills, training and coaching skills
  • Knowledge of HACCP systems and ISO 22000 is an advantage
  • Manage and control on a daily basis all food costs and manpower costs to meet monthly business forecasts
  • Excellent understanding in financial performance and future planning
  • Proficiency in both written and spoken English and Chinese, Mandarin is an advantage
  • Administrative skills including good computer literacy with knowledge in Word, Excel, online ordering system and scheduling
