The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

The Job

• Work independently.
• Familiar with all different stove cooking techniques, and the yield of dried food.
• Handle all expensive banquets and dishes.
• Instruct Stove No. 3, No. 4, No. 5 and Junior Cook to arrange the mise-en-place and after-work environment sanitation.
• Monitor the production of deep fried chicken, pigeon, marinade water and spiced salt.
• Monitor the cooking procedures of sauce, gravy, and seafood soy sauce meet standard.
• Instruct Steamer Cooks on their duties and monitor the inventory of the dried food and semi-prepared dried seafood.
• Instruct Dish Up on their duties and the standard requirement of after-work sanitation.
• Handle and follow-up the kitchen maintenance order of the stove equipment.
• Execute the work orders from superior, communicate to the subordinates and implement.
• Understand the recipes and the ingredients and all dishes, and teach the subordinates to work.
• Assist to monitor the quality of Stove No. 3, No. 4, No.5’s production and semi-cooked products.  Direct the production of all dishes.
• Assist to monitor the quality of Steamer Cooks’ production, and the yield of dried food.
• Inspect daily the switches of gas, water, and electricity are turned off after work.
• Direct Junior Cook to perform regular kitchen cleaning to ensure environment sanitation.
• Inspect the dried food store's inventory.

• 掌握各種炒鍋烹調技術, 乾貨發製成率。
• 處理製作所有高級宴席及小菜。
• 指導三, 四, 五,尾鑊營業前準備工作, 市後崗位環境衛生。
• 監察製作炸雞, 乳鴿, 上皮水及淮鹽等製作。
• 監察汁醬, 獻湯, 海鮮豉油製作程序標準。
• 指揮蒸/扣/燉廚師署理管業時工作, 監察乾貨, 海味發制後貯存量。
• 指揮打荷日常準備工作, 每天市後清潔衛生要求。
• 處理本科工具維修柯打,簽發及追跟。
• 執行上級分配工作. 向下溝通及執行指令。
• 識別各種菜式成份及配料, 指導下層工作。
• 協助監察,三, 四, 五鑊之出品及半製成品質量, 指導各種菜式製作。
• 協助監察上雜湯水製作質素, 乾貨發制起貨成率。
• 巡視每天營業後燃料掣, 水掣, 電掣之關閉。
• 指揮廚工定期清潔廚房, 保持環境衛生。
• 視察乾貨倉存量。

About You

入職要求:

• 五年或以上相關經驗
• 具一年或以上管理督導經驗
• 對爐頭組別包括日常運作、 成本控制和採購制度， HACCP衛生制度、工作安全及處理員工關係等事宜，具相當的認識。
• 良好的人際關係和溝通技巧
